Nothing seems to be healthier and more appetizing than this dish. The veggies take a bit longer to cook; however, is so worth it!
Approximate Prep and Cooking Time: 40 Minutes Approximate Cost: $10.59 or $5.30 per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 2 Ingredients 2 salmon steaks ($4.50) 1 tsp. fresh ground pepper (.15) ½ tsp. sea salt (.10) 1 tsp. Paprika (.15) 2 tbsp. Olive oil (.55) 2 sweet potatoes (1 lb. $ .99/lb.) (.99) 1 lb. pan roasted beets ($2.40) ½ lemon in slices (.35) 1 Avocado ($1.25) 2 tbsp. chopped chives (.15) Directions Pat dry and season the salmon with pepper, salt, Paprika and 1 tbsp. olive oil. Refrigerate. Peel the beets, dice in 1” bite size pieces, boil in salted water until almost tender. Drain the water, pat dry and briefly sauté in olive oil. Peel the sweet potatoes, dice in 1” bite size pieces, boil in salted water until almost tender. Drain the water, pat dry and briefly sauté in olive oil as well. Sauté the salmon steaks in their olive oil marinate until golden and juicy. To plate add the salmon, beets, sweet potatoes, avocado, lemon slices and chives. Done.

This is another one of my crazy SIMPLE salads that not only looks great at the table but that is healthy-delicious! The mix of the sweet kiwi with the tangy vinaigrette, onion, tomato and Parmegiano Reggiano against the sweet spinach flavor makes it a winner. Approximate Prep and Cooking Time: 15 minutes Approximate Cost: $6.20 or $3.10 per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 2 Ingredients 2 c. baby spinach ($1.50) 1 kiwi (rinsed, peeled and sliced) (.70) ½ red onion, sliced (.40) 1 large tomato (.50) 1/4 cup Parmeggiano Reggiano cheese ($1.10) ¼ c. Angie’s Vinaigrette (see my link below) (or add the one of your choice) ($2.00) Directions Add the spinach to a medium size bowl. Rinse, peel and cut the kiwi, onion and tomato, add them to the spinach bowl. Prepare and add my vinaigrette to the salad bowl. (I provide the link below) Sprinkle with cheese to taste. (If you have few walnuts, chop some and add them too.) ENJOY! HACK: I used only butter for my recipe, however, if you want more crunchiness, use ½ butter and ½ Crisco shortening. (I prefer not to use this method.) |
