TILAPIA OVER SPINACH, MADUROS and AVOCADO with BALSAMIC VINEGAR, SEA SALT and FRESHLY GROUND PEPPER!2/3/2017 Simple, yet fulfilling and delicious. Tilapia is a white flaky fish that has become very popular. (Always buy your seafood from reputable markets such as Wegmans, Publix, Costco, Traders Joe’s, your fish monger and the such, with the appropriate certifications and with no additives, preservatives or seasonings.) It will take you no time at all to make my recipe. Specially, when you come home from work and have a number of family members to feed in a hurry. I am also using pre-cooked Goya Maduro/Plantains that can be microwavable for few minutes to save you time. If you want, make a salad and you are good to go in less than 30, how’s that? Approximate Prep and Cooking Time: 25 Minutes Approximate Cost: $10.62 or $2.66 per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 4 Ingredients 2 large Tilapia filet cut in half ($2.83) 1 tbsp. lemon pepper (.20) 1 tbsp. Olive oil to marinate plus ½ tsp. to sauté (.40) 1 box 11 oz. Goya Ripe Plantains ($2.24) 2 tbsp. of chopped scallions to garnish (.25) 1 lemon cut in four slices to garnish (.30) 2 cups of spinach to put the fish over ($1.50) ¼ cup Balsamic vinegar to pour over avocados (.90) 2 Avocados ($2.00) Directions Pat dry the fish and season with 1 tbsp. olive oil and Lemon Pepper Seasoning to taste. Refrigerate. Remove the plantains from the box, place in a microwave safe baking dish and cook according to box directions. Set aside. In a skillet, add ½ tsp. of olive oil and just sauté the tilapia until done but not over cooked, about 3 minutes per side. Peel, slice the avocados in ½, fill them with balsamic vinegar and add salt & pepper to taste. Serve and don't forget to garnish well with spinach, scallions and lemon, it tastes amazing. Done!

For many people, using regular “Morton Salt” is enough to put on everything they cook that requires salt. For others, there is such an abundance of types and flavors of salt, that they can’t get enough of it. I am one of them and so is my son. Warning: SALT IS TO BE USED IN MODERATION ALL THE TIME, let’s not forget that. However, you don’t need much to season your meals and make them taste great. On the other hand, skimping salt in meals makes them boring and flavorless. So let’s get down to business. I just want to give you an unpretentious idea of how many salts are out there to be discover. For example; you can get Kosher, or Hawaiian pink (from clay) and Hawaiian black (from volcanos), or natural sea salt, French sea salt, Sal de Fleur, crystalized salt, grain salt, super fine salt, well you get the drift. The interesting fact is that each has its own use. Therefore, please go to your gourmet market and get some today. You will never regret it. |
