My 3-Ingredient Pulled Pork Recipe. Yes, It’s Not Summer yet but My Recipe Will Make You Feel It Is.3/7/2017 Trust me on this one, pulled pork is the easiest meal to make and it feeds an army. I used the whole pork shoulder cut, which is the cut above the picnic. It comes with a blade that provides extra flavor. Unfortunately, this cut is extremely fatty; however, I removed a great deal of the fat and replaced it with a healthier fat, my basting oil which primary ingredient is olive oil. Approximate Preparation Time: Season the pork the day before Approximate Cooking time: 7-8 hours (remember, it cooks at a low temperature for a long time) Approximate Total Cost: $18.14 (or $1.07/serving) Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 17 Ingredients The following are all the ingredients that you will need to make this meal. 1- 9lb. Whole Pork Shoulder Blade Roast (a 9 1/2 lb. Pack cost me $14.39) 1/2 to 3/4 cups of Angie's Basting Oil (see the recipe below) ($2.00) 1/4 to 1/2 cup of Angie's Dry Seasoning (see the link below) ($1.75) Directions Start by removing as much fat as you can from the pork. (I removed approx. 2 lb.). Place the clean pork in a foil pan or the pan of your choice that is not shallow. Add the basting oil and the seasoning and rub well throughout. Let it rest overnight. Roast at 280-to 300 degrees, the hours will depend on the weight of the cut, about 1 hour/pound. Since after removing the fat I ended up with approx. 7lb. I cooked my pork for 7 hours. Prep Time: 10 minutes Approximate Cost: $3.54 Serve: Multiple Servings Ingredients 8 oz. Olive Oil (@ Walmart: Pompeian Organic EVOO16 oz. = $4.98) (8 oz. = $2.49) 1/2 tsp. Parsley Flakes (.15) ¼ tsp. Cilantro Flakes (.15) ¼ tsp. dried Oregano (.15) ¼ tsp. dried Thyme (.15) ¼ tsp. dried Basil Leaves (.15) ¼ tsp. of Garlic Powder (.15) ¼ tsp. Rosemary (optional) (.15) Directions Clean an 8 to 10 oz. glass bottle. Add all the dried ingredients. Fill the bottle with olive oil (or your preferred oil; canola, vegetable, sunflower, peanut oil…) Shake well and leave it at room temperature for few hours. Then Refrigerate. Shake well before using. HACK: This pork goes perfectly with corn on the cob, boiled potatoes with pesto and yellow rice. I did not figure these other ingredients in the cost because I want you to decide to use my pulled pork in any form you wish, like sandwiches.

Week days are hectic with work and kid’s activities, however, we all have to eat. Let’s just make a simple and nutritious pan seared tilapia with Brussel sprouts and sun-dried tomatoes. This meal is done in no time! Approximate Prep and Cooking Time: 35 MINUTES Approximate Cost: $10.87 or $2.72 per serving Difficulty Level: __X _ Easy ____ Intermediate ____ Advanced Servings: 4 Ingredients 4 tilapia stakes cut in half ($5.60) 2 cups of sliced Brussel sprouts ($1.30) ¼ cup of sun-dried tomatoes (.97) ¼ cup olive oil (you may not need to use it all) ($1.25) 1 tbsp. Parsley flakes (.15) 1 1/2 tbsp. Lemon pepper (for the fish and the roasted Brussel sprouts) (.25) 1 box of Parmesan Couscous ($1.35) Directions Pat dry the steaks and season with olive oil, lemon pepper and parsley flakes, set aside. Cook Couscous according to packet directions. Clean, slice the Brussel sprouts and sauté in 1 tbsp. Olive oil until golden brown. Add the sun-dried tomato and stir well. Pan seared the tilapia steaks until golden on the outside and tender on the inside. Ready to plate your meal. Enjoy! Note: You will still have plenty of leftover fish, smile. This soup is easy to prepare. I like to season the chicken breast with lemon pepper and then poach it in med-low until super tender. Next, I use the poached broth in the soup, as well as some purchased commercially for a complexity of flavors. Olive oil (.30) 1 cup Store bought chicken broth (.50) ½ lb. (1/2 box of Multi-Grain Angel Hair Spaghetti $1.38/box (.70) Salt to taste to cook the pasta (.15) Directions
Enjoy! HACK: You can see a simpler process to make it in my last slide; after poaching and cubed the chicken, you can add all other ingredients and cook for 10 minutes. Done. Also, If you have leftover Multi-Grain Angel Hair pasta, just put it in a small ziplog bag, seal it and freeze it for another dish during the week. |
