This is not your traditional Tilapia dish, since it’s a combination of the fish mixed with clam sauce and furthermore, a bean that is not too popular in many homes, smile, mashed Blackeye Peas. Never mind the combo, I think that you should give it a shot. You will be surprise of the combined flavors! Approximate Prep and Cooking Time: Under 30 Minutes Approximate Cost: $10.48 or $5.24 per serving Servings: 2 Ingredients 2 Tilapia filet ($2.83) 1 ½ tsp. Old Bay Seasoning (.20) ¼ cup Olive oil (may not use it all; to marinate, sauté, for the sauce and to mash the beans) ($1.25) 1 container of chopped clams in clam juice, drained, save the juice for the sauce ($2.70) 1 cup Beef broth ($1.00) 1 tbsp. Dried Parsley (.15) 1 tbsp. Dried onions (.15) 8 garlic cloves chopped (.35) 2 tbsp. of chopped parsley, for garnish (.25) 2 tbsp. of Chopped Basil, for garnish (.30) 1 lime cut in half, for garnish (.30) 1 Avocado ($1.00) Directions Pat dry the fish and season with 1 tbsp. olive oil and Old Bay Seasoning to taste. Refrigerate. In a skillet, add 1 tbsp. of olive oil and sauté the garlic briefly, then add the dried parsley, 1/2 cup of beef broth, dried onion and the clam juice, simmer to reduce for about 5 minutes or less, turn off the heat and add the clams. Cover and set aside. Drain the Blackeye peas, rinse and add them to a saucepan with 1/2 cup of beef broth, some chopped basil and simmer briefly until the broth is reduce but you still have enough liquid left to mash the Blackeye peas. Mash the Blackeye peas in the broth and add olive oil instead of butter, to taste. Also, you may need to adjust the salt, since you only used the broth for salty flavor. Now we are down the homestretch, the fish. Just sauté the tilapia until done but not over cooked, about 3 minutes per side. Serve and don't forget to garnish well, it tastes amazing. Trust me, this is a real story. I was working in one of my many projects and lost track of time. Suddenly, my husband yell from another room; "hey, is 11: am, I am starving". Then rather quickly I realized I was hungry too. I dashed to the kitchen thinking -- what to cook? Then an idea came up, I got this, brunch for 2. However, I still didn’t know what. It was now 11:10 AM. Ok Angie, think fast, what to make? Eggs? Fruits? Smoothies? Oatmeal? Then an “aha” moment came upon me. Why don't I combine eggs and add lox and whatever else I could find in the fridge. The Plan: Exited with the plan, I got the skillet, added the eggs, and while they cooked, I cut the onion, lemon and tomato, and got the 2 plates ready. (Unfortunately, I didn't have bagels, chives or cream cheese, so I had to improvise.) Outcome: At 11:25 AM we were having brunch with a refreshing glass of Prosecco. I tell you this, I am not a chef, I just enjoy and have a passion for cooking and if I can do it, so can you. So, get in your kitchen and start having fun! NOW! Smoked salmon ($3.50) ½ small size onion (.25) 2 tsps. Capers (.20) 2 tsp. fresh lemon juice (.50) 1 Roma tomato (.35) ½ Jalapeño (.25) 4 eggs (.84) 1 tbsp. olive oil (.20) 2 tsp. Red Hot Sauce (.10) Salt and Pepper Directions Cook the eggs in olive oil Cut the tomato, onion, jalapeno and lemon. Assemble these ingredients in your plates and enjoy. HACK: You may want to add bagels and cream cheese or garlic crostinis. |
