Yesterday and day before you had my HACK post of prepping and divide haddock steaks to plan future meals as well as one of my haddock recipes. Today you are getting a second idea of how you can use 2 wild haddock filets in a meal. Enjoy!
Category: Entrée Approx. Prep and Cook Time: Under 30 Minutes Approximate Cost: $10.03 or $5.01 per serving Difficulty Level: Easy Allergens, Other: Gluten Free Servings: 2 Ingredients 2 large haddock steaks seasoned with my dry seasoning or your favorite, refrigerate ($3.90) 8 to 10 cloves of garlic, peeled (depending on size) ($1.00) 4 oz. or half of an 8oz. Sun Dried Tomato jar in olive oil (@ Trader Joe’s) ($2.00) 2 c. of baby medley potatoes, rinsed and boil until tender ($1.25) 1 ½ tsp. Angie’s dry seasoning (or to-taste) (.40) 2 tbsp. Avocado oil (for the haddock marinade) (.50) 1 lemon, rinsed and sliced (.98) Salad for 2 (OPTIONAL) Directions Prep all the ingredients as I indicated under the ingredients list. Start boiling the baby potatoes is lightly salted water until tender. Then drain. Sautee the garlic briefly and then add the sun dried tomatoes. Add the potatoes, stir and season to-taste. Remove from skillet and add additional oil if needed to sear the cod fish until golden. Now you are ready to plate. Enjoy! We all know that haddock fish is always available and fairly priced. It also cooks quickly, as one can either pan sear it, oven baked it, fried or whichever way you want. Bottom line, it is light, healthy and delicious.

Angie’s dry seasoning (or your favorite) (.20) 1 tsp. Roasted granulated garlic (.20) 1 ½ tbsp. Angie’s basting olive oil (.40) Ingredients for the Salsa ($3.93) 1 cup of cilantro, rinsed, pat dry, stems removed and chopped (.50) 4 cloves of garlic, peeled and chopped (.30) ½ small jalapeno, rinsed, pat dry and seeds removed (.30) ½ small onion, peeled and chopped (.25) ½ med. size avocado. rinsed, pat dry, peeled and cut in cubes ($1.00) 1 tsp. Angie’s dry seasoning (or your favorite) (.20) 1 ½ tbsp. Angie’s basting olive oil (.40) 1 lemon, rinsed, pat dry, juice extracted (.98) (I also use a small amount of red sauce that I make a day before and it was perfect) Directions Prepare all the ingredients as I indicated under the ingredients list above. Prepare the salsa, season the haddock and refrigerate for about 10 minutes. Sear the haddock fish and now you are ready to plate. Enjoy! So, I purchase the fish, came home, prepare the filets and they render meals for 8 people plus fish chinks to make cakes for 2.

Cut the filets in whichever way you plan to cook them or follow my slide presentation. Place them in separate containers or bags and freeze until time to use them. Nothing is as refreshing as a slice of cold watermelon on a hot day, especially after returning from a long walk or coming from the gym, smile.
But let’s talk about selecting one from the Farmers market or the grocery stores. Here are some pointers that I learn way back, since I did not grow up eating them because I was picky, silly me! Smile 1. Select a watermelon that sounds hollow when you tapped it and also, that is big. 2. When you are checking them, if the watermelon has a yellow spot, it means that it was left to ripe in the ground on that side, therefore, that’s the reason why it developed the yellow spot. There is absolutely nothing wrong about that. On the contrary, if you see that yellow spot, the larger it is, the riper and sweeter that melon is. Therefore, grab it and run to pay for it, go home, process it and enjoy it later, smile. 3. Finally, when I get home with my watermelon, the first thing I do is rinse it with vegetable soap, pat dry and begin to slice it however I wanted. I make thick half rounds slices to eat by hand on a hot day. Next, I cut a good portion of what’s left, discard the peel, cut in cubes and place in two containers in the fridge to use for salads, cottage cheese with other fruits and honey, and watermelon smoothies. There you have it friends, enjoy this super refreshing fruit! This is such a simple, economic and super delicious complete meal. I used my own chicken stock for the Mofongo. Mofongo (or green plantain pieces) is available even at Walmart in the freezer section, in case that you are in a hurry and can’t do it from scratch. Smile!

Paprika (.10) 1 tsp. Granulated Onion (.10) 2 tbsp. Chopped Dry Onion (.10) 1 ½ tsp. Granulated Garlic (.10) 1 ½ tsp. Lemon Pepper (.10) 1 ½ tbsp. tbsp. Panko (.10) 1 tsp. Angie’s basting olive oil (.30) 1 tbsp. Angie’s basting olive oil to sauté the chicken meatballs on a skillet Ingredients for the Mofongo ($5.35) Half a pack of Mofongo Chips ($2.80) 1 tsp. of AdoboChon (or the seasoning of your choice) (.10) 1 ½ tbsp. Angie’s basting olive oil (.45) 1 tsp. Granulated Garlic (.10) 1 to 1 ½ c. of chicken stock ($1.00) 1 ½ c. of broccoli florets (rinsed, steamed few minutes in lightly salted water until light green) (.90) Directions Prepare the ingredients as I listed under the Ingredients Lists. In a med. size bowl add the chicken and all the ingredients listed under Meatballs, mix them all well just until combined and either by hand or with an ice cream scoop, make the chicken meatballs and refrigerate. Steam the florets, drain, set aside. Prep the mofongo by adding all the wet ingredients to a saucepan, bring it to a boil, reduce to low, add the mofongo chips and all the dry ingredients. Mix well until you get a purée like mashed potato, add more olive oil and or chicken stock as needed. Finally, sauté the meatballs until cooked and golden, add the steamed broccoli, stir. Plate the meal and enjoy! FAT FREE Cottage Cheese ($2.00) 3 pitted dates (.50) 3 figs (thanks to one of my neighbors) ($1.50) 6 cherries, rinsed pat dry and pitted (.90) ½ tsp. Cinnamon (.10) ½ tsp. Ginger (.10) Honey to-taste (.60) Directions Prep all the ingredients as listed under my ingredients list. Get two suitable dessert dishes, scoop 1 c. of cottage cheese on each one. Sprinkle some of the cinnamon and ginger over the cottage cheese. Garnish with the figs, dates and fresh cherries. Drizzle honey over each dessert as you like. Time to eat it! Angie’s basting olive oil (.45) 1 ½ tbsp. Angie’s dry seasoning (or to-taste) (.25) 2 tbsp. Angie’s homemade pesto ($1.20) 1 tbsp. toasted Sesame seeds (.30) 1 c. broccoli florets ($1.00) Directions Rinse and flash boil the potatoes until tender, about 10 to 15 minutes. Drain, add the broccoli on that water for 5 minutes, remove and drain. set aside. Pat dry and season the salmon steaks to-taste with basting olive oil and dry seasoning (or to-taste). In a skillet with some of my basting olive oil, pan seared the salmon filets on the skin side. Then sprinkle sesame seeds on the meat side, pat it down and flip the salmon to cook on the meat side until golden. Meanwhile, while the salmon cooks, warm the baby potatoes and broccoli briefly, add my pesto sauce and stir to combine well. Time to plate my meal friends. Enjoy! Orzo (.30) 3 large garlic cloves, chopped (.25) 1 small onion, chopped (.30) 3 tbsp. of Angie’s basting olive oil (2 tbsp. to sauté the chicken, 1 to stir fry the Orzo, onion, garlic) (.60) 2 tbsp. Angie’s dry seasoning (1 for the chicken steaks and 1 for the Orzotto) (.30) 1 Sofrito frozen cube (.20) 2 chicken breasts steaks, season with Angie’s dry seasoning and some basting oil. ($2.00) 2 c. (plus more) of chicken or beef broth for the Orzotto ($1.20) 2 tsps. of Tuscan Herbs and Spices (.15) MY PASTA SAUCE TO-TASTE, posted yesterday, warmed up. Directions Prep the ingredients as listed above. In a skillet with some of my basting olive oil, sauté the onion and garlic and add the Tuscan spices or the ones of your choice. On a separate skillet with some of my basting oil, sauté the Orzotto, when golden, add the chicken or beef broth, the seasoning and simmer, when it dry's out bit, add more broth until the orzo is soft and cooked and creamy, however, not dry. At the same time sear the chicken steaks until golden brown, set aside to rest for few minutes. To plate, pour some of the warmed pasta sauce over the orzo, add the chicken on top, garnish and you are ready to eat. I was craving red sauce of some kind and didn’t want a store bought. Then, I looked at what I had in my pantry at the time and found, diced tomato, tomato sauce, tomato paste and Tuscan herb mixed that one of my twins gave me from an Italian shop near her home. I added black pepper, pepperoncino’s, one cube of my frozen Sofrito and even a piece of jalapeno. Well, I love it and if you want to omit the jalapeno and pepperoncini just do not add it.

(or 2 tbsp.) of Angie’s basting olive oil (.60) Directions Prep all the ingredients as listed under the ingredients list above, Sautee the onion, garlic and jalapeno. Add all the dry seasoning herbs, add the tomato sauce, paste and diced tomato as well as the Sofrito cube and simmer for few minutes, done!
