** After I used all the banana peppers, I kept the pickled water. Then, I hard boiled the eggs, cool them down and placed them inside the pickled water jar and refrigerated them for 3 days. MY DOVER FILLETS OVER FLAT ROASTED POBLANO PEPPERS with WILD MUSHROOMS COUSCOUS and AVOCADO9/7/2018 I just decided that I wanted to make my Dover fish in a different way this time. Then, I remembered that there was a poblano pepper in my fridge and a light bulb went up my brain. I know, I hear you saying that poblano peppers are traditionally filled with cheese and meats. However, I like to think outside of the box and this is what I came up with. It must have been so good, since my husband ate it all and was so impressed, ha, ha, ha. Approximate Prep and Cooking Time: 40 minutes Approximate Cost: $14.01 or $7.00 per serving Difficulty Level: Easy __X__ Intermediate ____ Advanced Servings: 2 plus Ingredients 1 lb. dover fillets cut in 1” pieces ($6.78) 1 large poblano pepper (.88) 1 shallot (.35) 3 garlic cloves (.15) ¼ c. Is super healthy and a good looking spread to use in a variety of ways at home. You can use it to entertain family and friends, as a snack with crackers and veggies, or to spread over bread instead of butter. Power house ingredients are; olive oil, garlic, chickpeas, lemon juice, Tahini and sea salt. Approximate Prep and Cooking Time: 10 minutes Approximate Cost: $3.65 OR .37 cents per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 10 Ingredients 3 med. size garlic cloves ($.50) 1 tsp. sea or kosher salt (whichever one you have in your pantry at the time) 1/4 tsp. of freshly ground black pepper 1 15.5 oz. can of chickpeas drained (keep 1/4 cup of the chickpeas water. I use Goya brand) ($1.00) 1/4 cup of lemon juice (I only use fresh) ($.40) 1/4 cup of Tahini Paste (I use Trader Joe’s Tahini Paste $2.99, but this product is available in many grocery stores) (.50) 1/4 cup of olive oil (I only use Goya EVOO brand) ($1.25) Directions 1. In a food processor process the garlic, salt and pepper. 2. Add the chickpeas, lemon juice, chickpeas water, tahini paste, olive oil and process. 3. For a creamier consistency add more chickpeas water or lemon juice until desire consistency is obtained. 4. Don’t forget to taste in case you need to adjust the seasoning. 5. Refrigerate. Tips: I make this recipe weekly; therefore, for a variety of flavors I add one of the following ingredients to the above recipe to give it a twist. Also, you can use it in bread instead of butter: 1/4 cup of roasted red peppers or 1/4 c of chopped cilantro, flat leave parsley or 1/2 chopped Jalapeño. When you are ready, serve it in a nice container, garnish with a drip of good extra virgin olive oil, sprinkle sweet Paprika and top with chopped scallions. Tasty, deliciously healthy and on top of all that, the colors look great in a bow or a plate. The salad dressing is simple and tangy. I would use this recipe for two lunch servings or if I decide to use it at dinner time, it could easily make 4 sides to accompany your meal. Rinse and cut the tomatoes, add them to the spinach bowl. Prepare a simple vinaigrette with the olive oil, vinegar and salt and pepper and add to the salad bowl. DONE! |
