There is no guilt whatsoever after eating this burger. The flavors are intense, no bread is needed (though you can use a burger bun if you prefer) and on top of that, the simple and affordable ingredients make this meal a hit! Approximate Prep and Cooking Time: Under 20 minutes Approximate Cost: $6.42 or $3.21 per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 2 Ingredients ½ lb. ground turkey ($2.25) 1 tsp. Adobo (.15) 1 tbsp. Olive oil (.40) 1 tbsp. Dry onion flakes (.35) 2 eggs, beaten with a pinch of salt (.32) 1 large eggplant (mine free from my garden) sells at stores $1.50/lb. Panko (.10) 1 avocado ($1.25) Parsley to garnish (.10) Directions Season the turkey with Adobo and dry onion flakes, make 2 large patties, refrigerate. Clean and slice the eggplant in 6 slices, about an inch size or under. Soak them in beaten eggs, cover with Panko, and repeat this step twice. Fry in olive oil over medium until the eggplant is tender and golden brown. Move the slices to a basket with paper towel to drain any oil. Sauté the ground turkey patties until golden brown; however, do not overcooked them. To plate, slice the avocado, add 3 eggplant slices and one patty, garnish with parsley. Done! Enjoy.

Sure, you can purchase avocado salad dressing anywhere; however, if you have the opportunity to make it at home, don’t let it pass you. Not only it is a healthier dressing, since you are not adding lots of other stuff to preserve it, but you are going to enjoy a fresh and healthier one. BONUS: Use it as dip with any chips of your choice, like tortilla. Try it, I am sure that you will love it. Approximate Prep and Cooking Time: 15 minutes Approximate Cost: $4.80 or .69 cents per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: approximately 8 INGREDIENTS 1 large avocado, peeled and cubed ($1.25) 2 tsp. fresh lemon juice (.50) 1 cup Tzatziki Sauce ($1.00) 2 small cloves garlic, minced (.10) 1/3 cup white onion, chopped (.25) 1 tsp. Adobo (.15) 3 basil leaves (.10) 1 tbsp. Red Hot hot sauce (.20) ¼ c. extra virgin olive oil ($1.25) DIRECTIONS Add all the above listed ingredients into a food processor and process until smooth. Taste to adjust any flavors you want more or less, to-taste. Store it in a nice glass salad dressing bottle. Then, refrigerate for about 15-20 minutes before serving. Use it on your salads. NOTE: Depending on your Tzatziki brand, some are thicker than others. If you want it smoother and more liquid like, add a couple of tsp. of milk or olive oil. Salads with fresh fruit ingredients like mango, pineapple and berries are very refreshing, easy to make and super healthy. I made my priority to create as many fruit based salads for dinner as I can weekly, especially, during the hot months of the year. Adobo (.15) 1 tbsp. of fresh lemon juice (.40) 2 tbsp. olive oil (.60) Directions Wash, pat dry, peel and cut the mango in chunks. Slice and chop the other ingredients and add them to a med-size salad bowl. To make a simple salad dressing, whisk together the lemon juice, olive oil and Adobo. Pour over the salad, and refrigerate before serving. DONE! |
