By using 1 large chicken breast, mixed with shredded cheese and the enchilada sauce, you can make about 6 enchiladas that could easily to serve 2 enchiladas for 3 people, or 3 enchiladas for 2 people.
 
This is a simple dish that takes no time to make and cost near nothing. However, the best part is that you are more likely to have these ingredients at home. If you don’t have fresh corn, use canned; no Ready Rice? Then use regular rice. The point is to be creative in the kitchen with what we have to stay in our homes.

Ingredients
1 large rotisserie chicken breast (1 chicken @ $5.00 divided in 6 parts = (.83)
1 bag of Ready to Use Red Beans Rice ($2.75)
6 corn tortillas (.60)
2 corn ears ($1.00)
1 avocado ($1.25)
1 can 28 oz. of Enchilada Sauce, green or red* ($2.90)
1 cup of shredded cheddar cheese ($2.55)
 
Directions
  1. In a saucepan with salted water to taste, cook the corn until soft, about 5 to 8 minutes. Drain, set aside.
  2. In a glass container, shred the chicken breast, then add ½ can of enchilada sauce, or to taste.
  3. Warm the corn tortillas for few seconds in the microwave to make them more flexible.
  4. Pour few tbsp. of the sauce to cover the bottom of a rectangular baking dish.
  5. Scoop a tbsp. of the chicken mix into half of the tortilla, sprinkle cheese and fold, place in the baking dish, seam side down.
  6. When you complete a layer of about 6, pour the sauce over, drizzle a bit of olive oil to taste and sprinkle cheese to cover the top.
  7. Bake at 350 degrees, just until the cheese melts, about 7-10 minutes.
  8. Meantime, cook the rice bag according to the pack directions.
  9. While the enchiladas are baked, slice the avocado.
 
Done, plate your economical rotisserie meal and enjoy!
 
*Beware: Old El Paso brand sauce is gluten free, others, like “Essential Everyday”, are not. Always read the ingredients.
