I recently posted my SALMON-COD cakes because I never get tired of cooking this protein in any form. Today, however; I chose my simple salmon cakes and since I had a huge Sweet Potato, I decided to turn it into crispy oven fries.

Prep and Cook Time: 35 to 40 minutes Approximate Cost: $ 10.11 or $2.53 per serving Difficulty Level: Easy Allergens, Other: Gluten Free Servings: 4 salmon cakes Ingredients 2 small salmon steaks cut in small bite size pieces ($3.76) 1 ½ tsp. Angie’s dry seasoning (.30) ½ cup of GF Panko (.30) 1 tbsp. Dry onion flakes (.30) ¼ c. chopped Italian parsley (.25) 1 egg (.20) 1 lemon (for juice and for garnish) (.35) 2 ½ tbsp. Angie’s basting oil (to marinate the cakes, for cooking them and for the sweet potatoes) (.65) 1 avocado, sliced ($1.25) 1 tbsp. basting oil to cook the cakes (.50) 1 large sweet potato, peeled, cut in potato fries style ($1.00) 1 avocado ($1.25) Directions Clean the salmon filets and cut them in very small cubes, (I discard the skin) and season it with 1 tbsp. of my basting oil and 1 tsp. of my dry seasoning. Set aside. Peel the sweet potato, cut it in French fries, rub 1 tbsp. of basting olive oil and place in an oven safe baking dish. Cook at 400 degrees for about 15 minutes or until golden and tender. Next, add the following to a med size bowl: 1/2 cup of GF Panko, 1 beaten egg, the juice of ½ a lemon, the dry onion flakes, parsley and finally, the already seasoned salmon cubes. Mix all well and put in the freezer for 5 minutes. After the 5 minutes are over, take the salmon mix from the freezer and mix well again. To obtain even sizes, scoop each salmon cake with an ice cream scooper and/or shape it with your wet hands. If you feel they are too sticky, just add some more Panko to the mix. Add 1 tbsp. of my basting oil to a skillet in med. high and cook your cakes until golden brown on both sides. You are now ready to start plating your salmon cakes. Slice the avocado and lemon. Done!
