When you want to eat healthy, your choice of vegetables and fish will be a good plan. Also, watching the amount of salt and using extra virgin olive oils will compliment and complete the meals. Not forgetting that these choices are so darn delicious too, smile.

Prep and Cook Time: 25 Minutes Approximate Cost: $7.00 or $3.50 per serving Difficulty Level: Easy Allergens, Other: Gluten Free Servings: 2 Ingredients 2 small Haddock filets ($3.00) 1 small or ½ of a med size Cauliflower, stems removed to make rice ($2.00) 1 c. chopped Cilantro (.50) 2 rinsed and chopped Celery stalks (.20) ½ small Onion, chopped (30) 4 large garlic cloves (20) 1 ½ tbsp. Angie’s basting olive oil (.40) 1 ½ tsp. Angie’s Dry Seasoning for the fish (.25) 1 ½ tsp. Adobochón Seasoning (or the one of your choice) for the rice (.15) 2 lemon slices (0) Directions Season the fish with my dry seasoning, 1/2 tbsp. of my basting olive oil and refrigerate. Cut the cauliflower in medium size pieces and place in the food processor. Pulse until the cauliflower looks a bit larger than real rice, remove, place in a container and refrigerate to use it at a later time. Meantime, chop the Cilantro, Celery, Onion and Garlic, add to a pan with 1 tbsp. of my basting olive oil and sauté until a bit golden. Now add the cauliflower rice and sauté until lightly cooked about 3 minutes. Place the haddock pieces on top of the rice, add 2 slices of lemon cover and cook until the fish is done. Plate the meal, garnish and serve. DONE, ENJOY!
