MY GARLIC-CILANTRO CHICKEN MEATBALLS with MOFONGO and STEAMED BROCCOLI

This is such a simple, economic and super delicious complete meal. I used my own chicken stock for the Mofongo. Mofongo (or green plantain pieces) is available even at Walmart in the freezer section, in case that you are in a hurry and can’t do it from scratch.  Smile!

Ingredients for the Meatballs ($4.20)
½ lb. 95% lean ground chicken ($3.00)
1 c. of Cilantro (rinsed, pat dry and chopped) (.30)
1 tsp. Paprika (.10)
1 tsp. Granulated Onion (.10)
2 tbsp. Chopped Dry Onion (.10)
1 ½ tsp. Granulated Garlic (.10)
1 ½ tsp. Lemon Pepper (.10)
1 ½ tbsp. tbsp. Panko (.10)
1 tsp. Angie’s basting olive oil (.30)
 
1 tbsp. Angie’s basting olive oil to sauté the chicken meatballs on a skillet
 
Ingredients for the Mofongo ($5.35)
Half a pack of Mofongo Chips ($2.80)
1 tsp. of AdoboChon (or the seasoning of your choice) (.10)
1 ½ tbsp. Angie’s basting olive oil (.45)
1 tsp. Granulated Garlic (.10)
1 to 1 ½ c. of chicken stock ($1.00)
 
1 ½ c. of broccoli florets (rinsed, steamed few minutes in lightly salted water until light green) (.90)
 
Directions
Prepare the ingredients as I listed under the Ingredients Lists.
In a med. size bowl add the chicken and all the ingredients listed under Meatballs, mix them all well just until combined and either by hand or with an ice cream scoop, make the chicken meatballs and refrigerate.
Steam the florets, drain, set aside.
Prep the mofongo by adding all the wet ingredients to a saucepan, bring it to a boil, reduce to low, add the mofongo chips and all the dry ingredients.
Mix well until you get a purée like mashed potato, add more olive oil and or chicken stock as needed.
Finally, sauté the meatballs until cooked and golden, add the steamed broccoli, stir.
Plate the meal and enjoy!
