This is another one of my crazy SIMPLE salads that not only looks great at the table but that is healthy-delicious! The mix of the sweet kiwi with the tangy vinaigrette, onion, tomato and Parmegiano Reggiano against the sweet spinach flavor makes it a winner. Approximate Prep and Cooking Time: 15 minutes Approximate Cost: $6.20 or $3.10 per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 2 Ingredients 2 c. baby spinach ($1.50) 1 kiwi (rinsed, peeled and sliced) (.70) ½ red onion, sliced (.40) 1 large tomato (.50) 1/4 cup Parmeggiano Reggiano cheese ($1.10) ¼ c. Angie’s Vinaigrette (see my link below) (or add the one of your choice) ($2.00) Directions Add the spinach to a medium size bowl. Rinse, peel and cut the kiwi, onion and tomato, add them to the spinach bowl. Prepare and add my vinaigrette to the salad bowl. (I provide the link below) Sprinkle with cheese to taste.
