I feel that salmon is one of the healthiest and most eaten seafood today. Yes, shrimp, crabs, etc. delicious indeed; however, not as packed with healthy nutrients to help us live longer. Don’t get me wrong, I eat them but in moderation.

Turmeric (.15) 2 tsp. Roasted Garlic and Herbs (.15) 2 ½ tbsp. Angie’s Basting Olive Oil (.50) 1 lemon, sliced (.60) 6 to 7 large cloves of garlic, chopped (.35) 1 avocado ($1.40) Directions Clean, pat dry the salmon filet and season with my basting oil, Turmeric and garlic herbs. Refrigerate. Rinse pat dry and slice lengthwise the eggplant, season with 1 tbsp. of basting oil, 1 tsp. Turmeric and 1 tsp. Roasted Garlic and Herbs. Roast in the oven at 375 degrees for 30 to 40 minutes, depending on your oven, maybe before or after that time. Peel and chop the garlic, also rinse pat dry, peel and slice the avocado. Close to the time the eggplants are done, sauté the salmon and garlic until golden brown. Plate by adding a slice of eggplant at the bottom of the plate, the salmon on top and the brown garlic sprinkled all over.
