MY PORK TENDERLOIN BISTEC'S PAIRED WITH EASY QUICK MOFONGO

Well, I actually didn’t cheat with the Mofongo box. It was just a quick prep because I didn’t have real plantains at home, plus I didn’t have much time to make dinner this night. Smile!

Ingredients for the Bistec’s (cube steaks) and MOFONGO ($8.05)
½ to 1 pork tenderloin filet (ea. pack @ Costco contains 4 filet) ($3.00)
3 tbsp. Angie’s basting olive oil (OR MORE AS NEEDED for both dishes) (.80)
3 tsp. Angie’s Dry seasoning (.20)
2 c. Mofongo chips ($1.50)
1 tbsp. Roasted Garlic (.10)
1 ½ to 2 c. beef broth ($1.25)
1 avocado ($1.20)
 
Directions for the Bistec’s
  • Clean the filet of all fat, pat dry, cut in half, then lengthwise, you’ll get about 3 to 4 cubed steaks, (however, for this recipe I used 2 and froze the other for another day) then pound flat with your “kitchen texture mallet”.
  • Season well with 1 ½ tsp. of my basting olive oil, 1 ½ tsp. Angie’s Dry seasoning (or to-taste).
  • Next, sear the steaks in their own marinate oil for just few minutes until cooked and golden brown. Allow to rest.
 
Directions for the Mofongo
Follow the direction in the back of the box or in a saucepan with 1 ½ to 2 c. beef broth, add the Mofongo chips in med-low. Allow them to absorb the broth to a creamy consistent. When they look the consistent like mashed potatoes, add the basting olive oil, roasted garlic and Angie’s dry seasoning to taste. Stir and add more broth (or seasoning) as needed to keep the Mofongo moist.
Finally, get your avocado and Done! Enjoy this delicious meal!
