YESTERDAY, I posted how to cook green bananas for those who never done it. Today, I am posting my recipe of seafood-sofrito-green bananas stew. Delicious and healthy.

Prep and Cook Time: under 30 Minutes Approximate Cost: $9.00 or $4.50 for 2 servings Difficulty Level: Easy Allergens, Other: Gluten Free Servings: 2+ Ingredients ½ red bell pepper, rinsed, pat dry, seeds removed, cut in strips (.75) 2 celery ribs, rinsed, pat dry, chopped (.20) 1 small red onion, peeled chopped (.50) 6 garlic cloves, peeled chopped (.30) 3 tbsp. Angie’s basting olive oil (.50) 2 tsp. Angie’s dry seasoning (.35) 2 tbsp. Goya Salad Olives, drained (.30) 2 c. large Shrimp, ($4.00) 1 c. frozen Corn (.40) 1 ½ c. seafood broth or stock (.90) 1 lemon to drizzle over the final dish (.80) Cilantro to garnish The 4 bananas that you prepared yesterday. Directions Boil the corn as the package directions, Season the shrimp, Cut the green bananas at 1”. Sauté the onion, celery, peppers, in 1 tbsp. of my olive oil, add the seasoned shrimp until pink. Remove from skillet and add to the same skillet the sliced bananas and corn sauté for few minutes then add the some of the broth/stock to-taste and bring to a light boil. Bring back to the skillet the veggies and shrimp mix and stir until all is combined. At this point add more broth if you want, stir and now you are done to plate.
