Proud mama flew to Florida to celebrate her son’s 18th Birthday and came up with these super yummy cheesecake cupcakes she found online, that all we wanted was more, more, and more of it, smile!

Prep and Cook Time: 1 hour 10 Minutes Approximate Cost: $12.90 or .54 cents per 24 cheesecakes or ($1.07 for 12) Difficulty Level: Easy Allergens, Other: Gluten Free ONLY if you use GF Graham Crackers Servings: 24 Ingredients for the Cheesecake Batter 2 (8 oz.) cream cheese packs at room temperature. ($8.00) 1 c. sugar (.50) ½ c. sour cream (or yogurt) (.50) 2 eggs (.40) 1 tsp. vanilla ($1.00) 2 tsp. lemon juice (.80) 24 liners for the muffin pan (.50) Ingredients for the Crust ¼ c. melted butter (.50) 1 ½ c. graham cracker crumbs (.70) Directions Preheat oven at 325 degrees and place liners in your cupcake pan. Combine the graham crackers and melted butter in a med size bowl, divide it between all the liners and press into the bottom firmly. Bake for about 10 to 15 minutes until dry in the center. Then reduce temp. to 300 degrees. In a large bowl with an electric mixer, beat the cream cheese until smooth. Add the sugar, eggs, sour cream, lemon juice and vanilla and beat for about 3 minutes until nicely smooth. Divide the mix evenly between the muffin cups filling up almost to the top. Bake for about 20 to 30 minutes until the centers are set. Remove from oven and allow to cool for about 30 minutes in a rack. Then refrigerate before serving for at least 3 hours.

Cod Filet (usually there are 2 filets per pk.) ($18.18) Directions Pat dry the filet(s), cut the projected filet size that you prefer. Mine are about 2 to 2 1/2“wide. Then, cut the narrow end parts of the filet in chunks about ½ inch to use them in stir fry with salmon bites as well, adding mushrooms, onion, peppers, all the stuff you want, then place over white rice. Finally, place 2 filets ea. in Ziploc bags (totaling 4 bags) and freeze until time to cook them. This is not the kind of breakfast that you eat daily or weekly; well, perhaps over the weekend, smile. It is simple with few ingredients, however there is a catch. Hollandaise sauce is somewhat tricky to make at home. (I’ll give you my simple homemade recipe under notes.) Meantime, get a bag of the Hollandaise sauce at the grocery store and boom, breakfast is ready in a few.

Prep and Cook Time: Under 20 Minutes Approximate Cost: $4.17 Difficulty Level: Easy Allergens, Other: NOT Gluten Free Servings: 1 Ingredients 1 light multigrain English muffin (you’ll use a full open face/serving) (.60) 2 large eggs (.40) 2 slices of Canadian bacon (.72) 1 envelope of Hollandaise Sauce (or make my homemade one) ($1.80) 1 c. milk (.25) ¼ c. unsalted butter (.40) Directions First, prepare the Hollandaise sauce according with the directions in the back. Set aside. Next, cook your Canadian bacon in a tsp. of olive oil until golden, set aside. Now, cook the eggs to your desired doneness (over easy are best). While the eggs cook, toast the split English muffin until light brown, add butter if you like. To assemble, place both pieces of English muffin on a plate, top with the Canadian bacon, then the eggs, the Hollandaise Sauce all over and garnish with chopped dill or parsley or chives. Serve with smoked salmon or prosciutto or blanched asparagus or even fruits, your choice! NOTES: My Simple Homemade Hollandaise Sauce recipe: 1 stick of unsalted butter, 2 egg yolks and 3 tsps. lemon juice, salt & pepper to taste. DIRECTIONS for my Homemade Hollandaise Sauce: 1. Melt the butter in a saucepan over medium. 2. Separate the yolks from the egg whites, place the yolks in a medium size bowl, add lemon juice and whisk until combined. (Reserve the whites for scramble eggs) 3. Very slowly, add the melted butter into the egg yolks mix and do not stop whisking, (otherwise you may end up with scrambled eggs.) Finally, season with salt and pepper or any other seasoning you prefer. Then allow it to cool a bit to get thicker. Yes, all my 9 grandkids can cook, and I mean desserts, pizzas, stews, well just about anything. Today Ry decided he was craving chocolate and wanted to make a cookie, smile. So I said go for it baby and I enjoyed every minute of it. At the end I just plated it, smile.

Prep and Cook Time: Under 30 Minutes Approximate Cost: $5.10 or .85 cents a slice Difficulty Level: Easy Allergens, Other: (Please use GF flour for Gluten Free) Servings: 6 to 8 slices Wet Ingredients 1 stick of unsalted butter at room temperature ($1.00) 1 tablespoon vanilla extract ($1.00) 1 large egg at room temperature (.20) Dry Ingredients ½ cup packed dark brown sugar (.20) ½ cup granulated sugar (30) 1½ cups all-purpose flour ($1.00) ¾ teaspoon baking soda (.10) ¾ teaspoon kosher salt (.10) 1 cup chocolate chunks ($1.20) DIRECTIONS Start the oven to 350 degrees. In a large bowl, combine the butter, brown sugar, granulated sugar and beat by hand until smooth and creamy, about 1 minute. Add the egg and vanilla and beat until all is incorporated. Shift the flour with the baking soda and salt, then add it to the butter mixture and mix until just combined. Add the chocolate chunks and mix just until combined Spread the batter evenly in a 12-inch round or square baking pan. Bake for about 20 minutes or until golden brown and set but still slightly gooey in the center. Let stand for at least 10 minutes before serving warm or at room temperature. Serve slices of the cookie with ice cream or whipped cream and fruits. Or, just eat it cooled like you would any other chocolate chip cookie, smile. Yeah, I hear you, the weekends are packed with errands, house cleaning, laundry, well you name it. However, it is so important to start the day with a healthy meal to sustain us for all the heavy work we’ll do. If you start this casserole the night before, all there is to do is to beat the eggs and milk in the morning, drizzle it all over and bake it. Boom!

Mexican style cheese $1.50) Directions First, EVOO spray an 8x8 or similar size baking pan, place parchment paper at the bottom and spray with oil again. Slice and pan fry the sausages. Beat the eggs and whipping cream until well combines, set aside. Then spread the tots to cover the bottom or the pan, add the cooked sausages on top, and sprinkle ½ of the cheese on top. Drizzle the egg mix over it and sprinkle the other ½ of cheese over it. Cover with foil and bake at 375 degrees for about 40 to 45 minutes depending on your oven calibration. After, uncover the pan and allow it to bake uncover for about 10 to 15 minutes to get a little golden. Watch it since you do not want a dry casserole. Done, ENJOY! Who doesn’t like a chicken breast sandwich? However, not a breaded chicken one for now, smile.

This breakfast is very fulfilling and have the healthy and nutritious elements we all need to keep going all morning until lunch time. The bacon is turkey with 70% less fat than regular bacon, the tortillas are organic and cooks in few minutes, a little cheese won’t hurt plus the scrambled eggs. Boom!

Mexican blend cheese ($1.00) Assorted fruits for 2 servings ($1.20) Salt & Pepper to-taste (.0) Directions Pan sear the bacon over med-low until golden, remove set aside. In the same skillet with just a bit of olive oil if needed add the whisked eggs and wait until they start to bubble a bit, then begin to scramble until almost done but still a bit moist or leave them unscrambled, sprinkle some cheese over. Remove from skillet. On the same skillet without butter or oil, add the tortillas until they start to pop. Then flip them until your desired color. Remove from skillet to a plate, add to each of the 4 tortillas the scramble eggs, more cheese, and top them with a slice of bacon. Roll them and boom, just add some fruits and enjoy. I was watching TV the other day and while switching channels I saw an old woman making biscuits, indicating they were only 2 ingredients. I was like, “Say what? I kept watching and as she indicated, they were really 2-ingredients and so easy to make. So, I decided to make them the next day to taste for flavor. Who can forget 2 c. of flour and 1 ½ c. whipping cream?
It was worth it and I could add anything I want like cheddar cheese and herbs. Use them at breakfast with butter or jelly or make biscuit cheese burgers for lunch like my grandson did, smile. . Boom! Prep and Cook Time: Under 30 Minutes Approximate Cost: $3.66 or .33 cents per biscuit Difficulty Level: Easy Allergens, Other: (For Gluten Free use GF Flour) Servings Approx. 11 Biscuit’s INGREDIENTS 2 c. Self-Rising Flour (SIFTED) $1.00 1 ½ c. Heavy Whipping Cream $2.50 Egg wash to brush before baked (optional) (.16) DIRECTIONS Butter and parchment a baking pan, set aside. Start your oven at 450 degrees Add the sifted flour to a bowl. Pour the heavy whipping cream into the bowl gradually about 3 to 4 times and mix with your hands or a wooded spoon each time you add heavy whipping cream. Mix only until both ingredients are combined. Flour your counter area and drop the sticky dough. It will still be sticky, however, it will become manageable once you start to knead it and eventually fold it before cutting the biscuits. Drop the dough and shape it into about 1” flat with your hands. Next, get a biscuit cutter (or a cup of sorts if you don’t have one), place some flour on the counter rub the cutter part with in the flour and start cutting the round biscuits. Place them in the buttered and/or parchment paper baking dish and make sure that they touch each other tightly. (I gave them too much space and they expanded more rather than get taller but they were delicious) Finally, brush them with egg wash so they will look golden and crispy. Bake for about 15 minutes at 400 to 450 degrees. (As always, watch over the 15 minutes, since each oven is calibrated differently and you do not want to burn the biscuits. This meal takes no time and as always, is super healthy. The price per serving is ridiculous and during the holidays, when we all spend tons of money on just about anything, this is a keeper.

Prep and Cook Time: Under 30 Minutes Approximate Cost: $9.70 or $4.85 per serving Difficulty Level: Easy Allergens, Other: Gluten Free Servings: 2 Ingredients 2 salmon steaks ($5.00) ½ bag of Little Potato Co. or any small baby potatoes ($1.50) 2 tbsp. Angie’s basting olive oil (.45) 1 ½ tbsp. Angie’s dry seasoning (or to-taste) (.25) 2 tbsp. Angie’s homemade pesto ($1.20) 1 tbsp. toasted Sesame seeds (.30) 1 c. broccoli florets ($1.00) Directions Rinse and flash boil the potatoes until tender, about 10 to 15 minutes. Drain, add the broccoli on that water for 5 minutes, remove and drain. set aside. Pat dry and season the salmon steaks to-taste with basting olive oil and dry seasoning (or to-taste). In a skillet with some of my basting olive oil, pan seared the salmon filets on the skin side. Then sprinkle sesame seeds on the meat side, pat it down and flip the salmon to cook on the meat side until golden. Meanwhile, while the salmon cooks, warm the baby potatoes and broccoli briefly, add my pesto sauce and stir to combine well. Time to plate my meal friends. Enjoy!
