Isn't Mother Nature adorable or what? I bought my share of beets for the week and it has never occurred to me to attempt to grow them at home. So I figured, if beets come with this bunch of greens attached, they may produce something, don't you think? My next step was to conduct an experiment and see where it would take me. First, I cut the small burgundy stump located on top of the beet, where the green leaves grow. (OF COURSE, I ROASTED AND EAT MY BEETS, SMILE). Then I decided that instead of planting it, I would put it in a shallow container with water to see what happens. To my surprise leaves were starting to sprout in the middle of the tiny burgundy stalks in few days. At this point I am not sure about what to expect. I am planning to put it in my garden soon. Will it continue to grow and bear no fruit? Will a beet develop from this experiment and will it taste good? Time will tell but for now I am a happy camper. If anyone has experienced this before, please let me know. To be continued, that is if I get to grow beets from these plants, smile.
