Trust me, this is a real story. I was working in one of my many projects and lost track of time. Suddenly, my husband yell from another room; "hey, is 11: am, I am starving". Then rather quickly I realized I was hungry too. I dashed to the kitchen thinking -- what to cook? Then an idea came up, I got this, brunch for 2. However, I still didn’t know what. It was now 11:10 AM. Ok Angie, think fast, what to make? Eggs? Fruits? Smoothies? Oatmeal? Then an “aha” moment came upon me. Why don't I combine eggs and add lox and whatever else I could find in the fridge. The Plan: Exited with the plan, I got the skillet, added the eggs, and while they cooked, I cut the onion, lemon and tomato, and got the 2 plates ready. (Unfortunately, I didn't have bagels, chives or cream cheese, so I had to improvise.) Outcome: At 11:25 AM we were having brunch with a refreshing glass of Prosecco. I tell you this, I am not a chef, I just enjoy and have a passion for cooking and if I can do it, so can you. So, get in your kitchen and start having fun! NOW! Approximate Prep and Cooking Time: 15 Minutes Approximate Cost: $6.19 (or $3.10 per serving) The Prosecco is another story! Servings: 2 Ingredients 1/4 lb. Smoked salmon ($3.50) ½ small size onion (.25) 2 tsps. Capers (.20) 2 tsp. fresh lemon juice (.50) 1 Roma tomato (.35) ½ Jalapeño (.25) 4 eggs (.84) 1 tbsp. olive oil (.20) 2 tsp. Red Hot Sauce (.10) Salt and Pepper Directions Cook the eggs in olive oil Cut the tomato, onion, jalapeno and lemon. Assemble these ingredients in your plates and enjoy. HACK: You may want to add bagels and cream cheese or garlic crostinis.
