HACK: IT’S THAT TIME AGAIN, TONS OF HERBS in MY GARDEN SO, I MUST PRESERVE THEM!

It happens every year, I start my herbs garden in the spring and all of the sudden, it turns into an abundance or fresh grown herbs. Then, I have to quickly do something before they go bad. Trust me, I do not want to lose these amazing flavor items for my meals. Therefore, I have few steps to keep my freezer stocked with my non-preservatives or chemicals sprayed herbs:

1. I harvest them before they start to flower or go into seeds.
2. I classify them by one type or by a mix of few herbs.
3. I rinse them thoroughly and pat dry them.
4. I remove the leaves or needless of some like rosemary or basil and discard the stems.
5. I fill my ice cubes ½ way with olive oil and submerge the herbs inside the cubes.
6. I finally freeze them until rock solid, then remove them from the cell cubes, place in Ziploc bags and freeze them until time to use.

My supply last for quite a long time and I have the luxury to have my quality control herbs in the freezer for stews, pesto, soups or anything else I wish to make. Boom!
