Sometimes there is misunderstanding about how to call these little rascals. The question is: "what is a cupcake and what is a muffin?". Hard to tell since both are cute small things. However, the difference between both is that a muffin is of denser texture, not too sweet, often times have fruits inside and doesn’t get frosting. The cupcake on the other hand is simply a baby mini cake, always sweet and you can eat with or without frosting; however, chances are it will always have a ton of frosting. My cornbread MUFFIN today is intended to be serve as dessert or with a cup of coffee for breakfast. This is not the savory kind though, is rather sweet; however, not over sweet and the ultimate option, if you don’t want to sprinkle powdered sugar, is to drizzle honey over it. BOOM! Approximate Prep and Cooking Time: 40 minutes Approximate Cost: $4.07 or .34 cents per muffin Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 12 regular muffins (and 2 smaller) Ingredients 1 cup fine Goya yellow cornmeal (.45) 1 cup all-purpose flour (.50) 2 ½ tsp. baking powder (.15) 1 tsp. salt (.10) 2/3 cup sugar (.40) 1 tsp. cinnamon (.20) 1 tsp. Nutmeg (.15) 1 tsp. Ginger (.15) 2 eggs (.32) 1/3 cup peanut oil (.65) 1 cup evaporated milk (.65) Powdered sugar to sprinkle over the muffins (.35) Directions Gather all your ingredients and preheat oven at 350 degrees. Butter a 12 muffin pan, set aside. In a large bowl, whisk cornmeal, sugar, flour, baking powder, cinnamon, nutmeg, ginger and salt. In another medium size bowl whisk the eggs, milk, and peanut oil. Now, whisk the wet mixture into the dry mixture just until the whole mix is combined. (The mixture is not intended to be smooth; therefore, do not over whisk.) Pour the batter into your muffin baking mold and bake until a toothpick in the center comes out clean. About 15 to 25 minutes depending on your oven calibration. NOTE: If you have any leftover batter, make individual baby cakes in separate molds. And don’t forget to drizzle honey over them… well, that is if you don't want to spread some butter. Yummy.
