My Chicken Soup, Super Simple! Made with Poached Chicken Breast, Noodles and Cilantro.

This soup is easy to prepare. I like to season the chicken breast with lemon pepper and then poach it in med-low until super tender. Next, I use the poached broth in the soup, as well as some purchased commercially for a complexity of flavors.
 
Approximate Prep and Cooking Time: 35 Minutes
Approximate Cost: $5.65 or $1.41 per serving

Ingredients
2 Chicken breast (seasoned for 10 minutes) ($2.50)
2 ½ cups of water (.0)
1 large Onion (.40)
10 cloves garlic (.35)
2 stalks of celery with tops (.30)
½ cup Cilantro or parsley (1/2 for the poaching and ½ to garnish at serving (.45)
1 tbsp. lemon pepper (or to taste) (.15)
1 tbsp. Olive oil (.30)
1 cup Store bought chicken broth (.50)
½ lb. (1/2 box of Multi-Grain Angel Hair Spaghetti $1.38/box (.70)
Salt to taste to cook the pasta (.15)
 
Directions
 
  1. Clean, pat dry and season the breasts with lemon pepper for at least 10 minutes.
  2. To poach the breast: Add a tablespoon of olive oil to the pot and briefly sauté the onion, garlic and celery.
  3. Carefully, add 2 ½ cups of water, cilantro, the breasts previously seasoned with lemon pepper, and cook in med low until the breasts are tender, about 15 minutes.
  4. While the breast cook, in a separate pot add 1/2 box (or ½ lb.) of Multi-Grain Angel Hair pasta and cook according to package directions. When done, drain, and add the store purchased broth to keep it moist. Set aside.
  5. Now, remove the chicken breast from the poached liquid, let it rest for 4-5 minutes, then cut in small cubes.
  6. Sieve the poached liquid to obtain a clear broth, add the cubed chicken, the noodles with the chicken broth and bring it all to a quick boil, remove from stove, serve the soup in the four bowls and garnish with cilantro/parsley.

HACK: You can see a simpler process to make it in my last slide; after poaching and cubed the chicken, you can add all other ingredients and cook for 10 minutes. Done.
Also, If you have leftover Multi-Grain Angel Hair pasta, just put it in a small ziplog bag, seal it and freeze it for another dish during the week. ​
