This pork cut is tender and reasonably priced to feed a family of 4. I always select a pack with less visible fat, in spite of the fact that I remove every bit of it and replace it with olive oil to season and to cook. This time I made a somewhat healthy meal adding the quinoa, ripe plantains and avocados. Approximate Prep and Cooking Time: 30 to 35 minutes, depending on Quinoa cooking time. Approximate Cost: $12.65 or $3.16 per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 4 Ingredients 1 pk. over 1 lb. country style ($4.51) 1 ½ tbsp. Adobo (.20) 2 tbsp. Olive oil (.80) 1 c. Quinoa ($1.00) 2 c. chicken broth ($1.25) 1 pk. Goya ripe plantains ($2.39) 2 Avocado ($2.50) Directions Clean and season the ribs with 1 tbsp. olive oil and 1 tbsp. Adobo, refrigerate for 7 minutes. Meantime, cook the Quinoa according to the packet directions, it takes about 25 minutes; however, use broth instead of water and add ½ tbsp. of Adobo instead of salt. While the quinoa cooks, sauté the country style ribs in their basting oil until golden. Let them rest for about 5 minutes while you slice the avocado and microwave the Goya sweet plantains. Done!
