Approximate Prep and Cooking Time: Under 20 minutes
Approximate Cost: $6.42 or $3.21 per serving
Difficulty Level: X Easy ____ Intermediate ____ Advanced
½ lb. ground turkey ($2.25)
1 tsp. Adobo (.15)
1 tbsp. Olive oil (.40)
1 tbsp. Dry onion flakes (.35)
2 eggs, beaten with a pinch of salt (.32)
1 large eggplant (mine free from my garden) sells at stores $1.50/lb.
1 avocado ($1.25)
Parsley to garnish (.10)
Season the turkey with Adobo and dry onion flakes, make 2 large patties, refrigerate.
Clean and slice the eggplant in 6 slices, about an inch size or under. Soak them in beaten eggs, cover with Panko, and repeat this step twice.
Fry in olive oil over medium until the eggplant is tender and golden brown. Move the slices to a basket with paper towel to drain any oil.
Sauté the ground turkey patties until golden brown; however, do not overcooked them.
To plate, slice the avocado, add 3 eggplant slices and one patty, garnish with parsley.
