MY GUAVA PANATELA TRIANGLES from SCRATCH, better than any BOXED CAKE MIX!

​This is my small panatela recipe to feed just a few. You can use a 6x3 or a 9” round baking pans. There are so many ways to use Guava in desserts. You can make my Panatela or the traditional Mantecaditos, (shortbread cookies), or Pastelillos (turnovers filled with guava and cream cheese), or, cakes covered with or filled with. Also, cupcakes, or slices of guava over cream cheese bites and a lot more desserts. Just be creative and you will be rewarded with tons of flavor.

Ingredients
1 c. All-purpose flour (.60)
¼ tsp. Salt (.10)
½ tbsp. Baking powder (.10)
 
½ stick of Butter ($1.00)
½ c. granulated organic white Sugar (.50)
1 large egg (.20)
1 tsp. Vanilla ($1.00)
1/8 sp. Almond extract (since it is very strong) (.10)
 2 tbsp. Powder sugar to sprinkle over the cake (.10)
Guava paste (placed over the 1st layer of cake batter in mold, cut in ¼” thick slices ($1.20)
4 oz. cream cheese to place over the guava layer slices cut in ¼ “thick (.50)
 
Directions
  1. Preheat the oven at 350 degrees, oil spray the baking mold w/parchment paper, set aside.
  2. Add the flour, baking powder and salt to a bowl, mix well to combine. Set aside.
  3. In another bowl, cream butter and sugar. Add the egg, vanilla and almond extract. Mix.
  4. Next, add the dry ingredients and mix just until all ingredients are combined.
  5. Divide the dough in half and pour one half inside the baking mold.
  6. Spread a generous amount of the guava paste (or jelly) over the top batter, then, the cream cheese over the guava.
  7. Now, scoop the other half of the dough over the guava/cream cheese until all is covered.
  8. Bake for 30 to 40 minutes, depending on your oven, until the cake is done.
  9. Allow to cool, then sprinkle powdered sugar over all of it.
  10. Cut in squares or triangles or bars and enjoy!
