Nothing seems to be healthier and more appetizing than this dish. The veggies take a bit longer to cook; however, is so worth it!
Approximate Prep and Cooking Time: 40 Minutes Approximate Cost: $10.59 or $5.30 per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 2 Ingredients 2 salmon steaks ($4.50) 1 tsp. fresh ground pepper (.15) ½ tsp. sea salt (.10) 1 tsp. Paprika (.15) 2 tbsp. Olive oil (.55) 2 sweet potatoes (1 lb. $ .99/lb.) (.99) 1 lb. pan roasted beets ($2.40) ½ lemon in slices (.35) 1 Avocado ($1.25) 2 tbsp. chopped chives (.15) Directions Pat dry and season the salmon with pepper, salt, Paprika and 1 tbsp. olive oil. Refrigerate. Peel the beets, dice in 1” bite size pieces, boil in salted water until almost tender. Drain the water, pat dry and briefly sauté in olive oil. Peel the sweet potatoes, dice in 1” bite size pieces, boil in salted water until almost tender. Drain the water, pat dry and briefly sauté in olive oil as well. Sauté the salmon steaks in their olive oil marinate until golden and juicy. To plate add the salmon, beets, sweet potatoes, avocado, lemon slices and chives. Done.
