Today’s post is about the side dish that will go with the seafood entree recipe that I will post tomorrow. I decided that since this is such a simple, healthy and colorful salad, it deserves its own recognition, smile. Approximate Prep and Cooking Time: 15 minutes Approximate Cost: $2.93 or $1.47 per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 2 Ingredients for the salad ½ head of red cabbage (.42) 4 mixed color gourmet sweet peppers (.65) 2 Roma tomatoes (.66) 1 cup of spinach (.70) Simple salad dressing: Salt and pepper to taste, 1 tbsp. olive oil, 1 tsp. lemon juice (.50) Directions for the Salad This will be self-explanatory; Shred the cabbage, mix with the spinach, chop the tomatoes, rinse the peppers and mix everything in a bowl (but the peppers). Add salt and pepper, olive oil and lemon juice to season to taste. Refrigerate before serving.
