Salads with fresh fruit ingredients like mango, pineapple and berries are very refreshing, easy to make and super healthy. I made my priority to create as many fruit based salads for dinner as I can weekly, especially, during the hot months of the year. Approximate Prep and Cooking Time: Under 15 minutes Approximate Cost: $4.16 or $2.08 per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 2 Ingredients 1 large mango ($1.10) ½ Vidalia onion, sliced thin (.35) ½ small garlic clove (.10) 2 Roma tomatoes (.66) 1 c. chopped fresh parsley (.80) ½ tsp. Adobo (.15) 1 tbsp. of fresh lemon juice (.40) 2 tbsp. olive oil (.60) Directions Wash, pat dry, peel and cut the mango in chunks. Slice and chop the other ingredients and add them to a med-size salad bowl. To make a simple salad dressing, whisk together the lemon juice, olive oil and Adobo. Pour over the salad, and refrigerate before serving. DONE!
