Tasty, deliciously healthy and on top of all that, the colors look great in a bow or a plate. The salad dressing is simple and tangy. I would use this recipe for two lunch servings or if I decide to use it at dinner time, it could easily make 4 sides to accompany your meal.

2 c. baby spinach ($1.50)
2 mandarins in juice cups (.70)
¼ c. dried cranberries (. 50)
1 c. Cherry tomatoes or 1 whole tomato ($1.00)
¾ c. extra virgin olive oil ($2.00)
3 tbsp. wine vinegar (.15)
Salt and pepper to taste (.10)
Add the spinach to a medium size bowl.
Rinse and cut the tomatoes, add them to the spinach bowl.
Prepare a simple vinaigrette with the olive oil, vinegar and salt and pepper and add to the salad bowl.
