MY TAKE ON MAKE YOUR OWN FILET MIGNON VEGGIES BOWL, FOR SURE!

I really love the buffet style meals, especially the ones I create at home. Why? Well, simply because there is always an assortment of ingredients to select and in this meal, the sky is the limit, you pick few or all, smile. Don’t you think? OH, and don’t be afraid at the list of ingredients, you may have them at home already, smile!

A. Ingredients for the filet ($15.25)
3 filet mignon stakes, cleaned, cut in bite size, sautéed in their own marinate ($14.50)
3 large garlic, chopped (.15)
2 tbsp. Angie’s basting olive oil (.50)
1 tbsp. Cilantro lime seasoning (.10)
 
B. Ingredients for the “Fixings Bar” ($7.60)
1 large Jalapeno, sliced (.15)
2 red/orange bell peppers, seeds removed, rinsed, pat dry sliced and sautéed ($2.00)
1 small onion, chopped (.25)
1 (15 oz.) can Black beans, drained, rinsed, drained again ($1.00)
1 small can of sweet corn, drained, rinsed, drained again (.90)
2 c. Broccoli florets rinsed and steamed until bright green color ($2.00)
2 c. Spinach ($1.30)
 
C. Ingredients for the Basmati Rice ($1.95)
1 c. Basmati Rice (.60)
2 c. Chicken broth ($1.25)
1 tbsp. Cilantro lime seasoning (.10)
 
D. Ingredients for the Avocado-Tomato Salad ($3.31)
2 tomatoes, cut in bite size small for the salad (.66)
½ chopped onion (.20)
1 tbsp. Angie’s basting olive oil (.40)
1 hand full of Cilantro, rinsed and chopped (.20)
3 large minced garlic, chopped (.10)
1 avocado ($1.25)
1 lemon (.50)
 
Directions to Prepare the Whole Meal
Prep the “Filet” ingredients listed under item A. Refrigerate.
Prep the “Rice” ingredients listed under item C. Set aside.
Prep the “Fixings Bar” ingredients listed under item B.
Prep the “Salad” ingredients listed under item D. Refrigerate.
 
You are ready to set all these awesome ingredients in mini meals to enjoy!
