Today you will be making three separate dishes for dinner. They are real simple and take no time to cook or prep them. Just get all your ingredients ready and in less than 30 minutes you will have dinner for 2 for a total of $12.65. Approximate Prep and Cooking Time: 30 Minutes Approx. Cost: $12.65 (or $6.33/serving) Servings: 2 Ingredients for the Pasta ($3.30) 1/2 pack thin multigrain or whole grain pasta ($2.15) 1 tbsp. Paprika (.25) 1 tbsp. olive oil (.30) 1 tsp granulated garlic (.15) 1/4 cup chopped cilantro (.45) 1 lemon (½ for garnishing and the other ½ to squeeze on top of the pasta) Directions for the Pasta Cook the pasta according to the packet instructions. When the pasta is done, drain and add the 5 remaining ingredients. Save ¼ cup of pasta water) stir and set aside. Ingredients for Tilapia ($3.65) 2 Tilapia filets ($2.85) 1 tbsp. Olive oil (.30) 1/2 tbsp. Angie's Dry Seasoning or the seasoning of your choice (.50) Directions for Tilapia While the pasta is cooking, season the tilapia and sauté in a skillet with olive oil until golden and flaky. Ingredients for the Salad ($5.70) 1 Roma tomato (.50) 1 avocado ($1.00) 2 cups of organic spinach ($1.00) 1/2 red onion in slices (.45) 4 Kalamata olives (.40) 1/4 cup of garbanzo beans, drained and rinsed. (.60) 4 strawberries (.75) Sprinkle Feta cheese. (.50) Angie's vinaigrette (or any vinaigrette of your choice). (.50) Directions for the Salad Prep all the ingredients, add to a salad bowl, add the vinaigrette of your choice and you are ready to serve. HACK: I recommend that you make and refrigerate the salad first. Second, tackle the pasta and while it cooks, get a skillet to cook the fish. Remember, you have to let the fish rest for 3-5 minutes after it cooks and before eating it to keep all the yummy juices inside. If you keep this pace you are good.
