How did I end up with this yummy Oven Roasted Bacon Chicken?

When you have spare time to make a fresh meal from scratch, a roasted chicken will never fail you. I will give you the recipe for this dish next week buy today, I am going to show you how I purchase, clean and cut the chickens before they get to look this good! Smile.

First, this is how I purchase them because it is cost saving to purchase in bulk and to butcher it yourself.

These two guys cost me $9.00 and they render approximately between 7-10 meals for 2 people. That means, if my math is right that each meal will cost you $1.12 that multiplied by 2 tells me that you total cost for that day meal will be $2.24. Well, I am sure that this figure will encourage you to follow my next hack for eating well while saving in bundles. However, first, you will have to do a little work.

Chicken #1: To be divided in multiple pieces for several meals. Work with one chicken at a time. These instructions are for the chicken that you will butcher only.

1.    Take all the skin off and discard.
2.    Cut all the legs and wings from the body and set aside.
3.    Cut the lower part of the chicken from both sides and set aside to make chicken broth.
4.    Now you are left with the breasts only. Cut them in half and squeeze your fingers between the meat and the bone to de-bone them.
5.    Now, you can decide what your meals will be. So, put them all in freezer bags, with dates.

Chicken #2: keep intact for roasting (I like to cover my bird with bacon)

1.    Take all the skin off and discard.
2.    Cut the lower part of the chicken from both sides and set aside to make chicken broth later. You can keep it uncut if you wish, or just cut it in the middle.
3.    If you keep it uncut, you can stuff it with lemons and herbs for more flavor.
4.    After this process, you will season it well and cook it. I will post the recipe next week for you. It is so delicious and I am sure that you will enjoy it.
