Preserving a Large Container of Store Bought Pesto, Don’t Let it Spoil in the Fridge.

​OK, so far my summer has been super hectic with lots of home improvement projects, a garden that woke up from the cold, my weekly fun projects, the family, travels and of course, my blog.
 
So what a sweet girl like me must do when she is grocery shopping at Costco and comes across a container of pesto, knowing that she ran out of it at home and will have to make another batch rather quickly? Well, Sweet girl just purchased it! Sorry, I will not do it again. However, now that I have this humongous container I must preserve it or it will go to waste. Therefore, this is what I did:
 
I took one of my baby cupcake molds, spray it lightly with oil and spooned the pesto from the jar into the molds.
 
That yield me 24 individual servings and there is still about ¼ of pesto left in the jar to be used in the coming weeks.
 
Next I place the mold in the freezer for several hours and when finally frozen, I pulled them out of the mold and placed the baby Pesto in a sealed plastic bag in the freezer. They will last for a long time and will be available for many meals to come.
