Yes, all my 9 grandkids can cook, and I mean desserts, pizzas, stews, well just about anything. Today Ry decided he was craving chocolate and wanted to make a cookie, smile. So I said go for it baby and I enjoyed every minute of it. At the end I just plated it, smile.

Prep and Cook Time: Under 30 Minutes Approximate Cost: $5.10 or .85 cents a slice Difficulty Level: Easy Allergens, Other: (Please use GF flour for Gluten Free) Servings: 6 to 8 slices Wet Ingredients 1 stick of unsalted butter at room temperature ($1.00) 1 tablespoon vanilla extract ($1.00) 1 large egg at room temperature (.20) Dry Ingredients ½ cup packed dark brown sugar (.20) ½ cup granulated sugar (30) 1½ cups all-purpose flour ($1.00) ¾ teaspoon baking soda (.10) ¾ teaspoon kosher salt (.10) 1 cup chocolate chunks ($1.20) DIRECTIONS Start the oven to 350 degrees. In a large bowl, combine the butter, brown sugar, granulated sugar and beat by hand until smooth and creamy, about 1 minute. Add the egg and vanilla and beat until all is incorporated. Shift the flour with the baking soda and salt, then add it to the butter mixture and mix until just combined. Add the chocolate chunks and mix just until combined Spread the batter evenly in a 12-inch round or square baking pan. Bake for about 20 minutes or until golden brown and set but still slightly gooey in the center. Let stand for at least 10 minutes before serving warm or at room temperature. Serve slices of the cookie with ice cream or whipped cream and fruits. Or, just eat it cooled like you would any other chocolate chip cookie, smile.

Yeah, I hear you, the weekends are packed with errands, house cleaning, laundry, well you name it. However, it is so important to start the day with a healthy meal to sustain us for all the heavy work we’ll do. If you start this casserole the night before, all there is to do is to beat the eggs and milk in the morning, drizzle it all over and bake it. Boom!

Prep and Cook Time: 45 minutes Approximate Cost: $7.64 or $1.30 per serving Difficulty Level: Easy Allergens, Other: Gluten Free Servings: 6 to 8 servings Ingredients 6 eggs $1.00) ½ pk. tater tots $2.65 7 Original Premium sausages, sliced (pk. cost is $2.97) $1.49 ½ c. heavy whipping cream or milk ($1.00) 1 ½ c. Mexican style cheese $1.50) Directions First, EVOO spray an 8x8 or similar size baking pan, place parchment paper at the bottom and spray with oil again. Slice and pan fry the sausages. Beat the eggs and whipping cream until well combines, set aside. Then spread the tots to cover the bottom or the pan, add the cooked sausages on top, and sprinkle ½ of the cheese on top. Drizzle the egg mix over it and sprinkle the other ½ of cheese over it. Cover with foil and bake at 375 degrees for about 40 to 45 minutes depending on your oven calibration. After, uncover the pan and allow it to bake uncover for about 10 to 15 minutes to get a little golden. Watch it since you do not want a dry casserole. Done, ENJOY! |
