THESE ARE CRAZY TIMES! The economy has many people struggling to make ends meet. Taxes, gas, interest rates, well, you get my point. People are struggling to feed their families with the high groceries cost. However, you can still eat healthy. This is a good example, a salmon filet cost me: $20.61. I was able to get 6 meals ($3.44 ea.) for 2 people on each meal., BOOM!
 
Meal #1: 2 salmon steaks w/beets, asparagus and Brussels;
Meal #2: Seared salmon Chunks with pan roasted potatoes; and
Meal #3: Asian Stir Fry Style Salmon .
 
Just add veggies and a salad and let’s say each full meal probably will cost under $5.00. I don’t even think a fast food restaurant charges this little for such healthy and affordable meal(s)!  FOLLOWING ARE THE MEAL MENU IDEAS BELOW for YOU!
 
Ingredients for MEAL #1: Pan-seared Salmon, mashed sweet potato & Brussels
2 salmon steaks (pat dry, cut in 1 ½ “pieces, season with dry seasonings & basting oil)
2 c. of cleaned Brussels sprouts, cleaned sliced and steamed until tender, and
Mashed Sweet Potatoes with Angie’s dry seasoning & Angie’s basting olive oil to-taste, plus a
Lettuce, Bacon, Tomato Salad
 
Ingredients for MEAL #2: Sauté Salmon Chunks, Asparagus, Beets
2 salmon steaks (pat dry, cut in 1 ½ “pieces, season with dry seasonings & basting oil)
½ lb. asparagus, steamed in lightly salted water (then sautee in the salmon pan drippings)
2 fresh beets, cut in 1” cubes and baked (or use store bought)
Angie’s dry seasoning & Angie’s basting olive oil to-taste
Shredded Carrots, celery, onion and sliced Tomato Salad
 
Ingredients for MEAL #3: Oven Roasted Salmon Steaks, Chopped Garlic, Potatoes
2 salmon steaks (pat dry, season with my dry seasonings & basting oil)
5 large garlic cloves, chopped, mixed with basting oil & seasoning to marinate salmon.
2 to 3 med-size red potatoes, season to-taste (oven roasted)
Angie’s dry seasoning & Angie’s basting olive oil to-taste to drizzle over the whole meal.
Spinach & Kale  with EVOO and Balsamic vinegar Green Salad
 
General Directions for the salmon:
Pat dry the salmon and season with 2 tbsp. of my basting olive oil and 1 ½ tsp. of my dry seasoning. Refrigerate one meal and freeze the other 2 salmon meals for next week.
 
NOTE: Each of these 3 meals with sides are approximately under $5.00 per 2 people.
