Seriously, this is the fanciest burger that you will ever eat, smile. The best part is that though burgers and healthy eating don’t go together, it does with my recipe, since the chicken is 99% fat free and you are eating the burger between layers of eggplant instead of bread. BOOM!

Prep and Cook Time: Under 30 Minutes Approximate Cost: $12.00 or $4.00 per burger Difficulty Level: Easy Allergens, Other: Gluten Free Servings: 3 Ingredients 1 lb. 99% fat free ground chicken ($5.80) 1 tbsp. Angie’s Italian dry seasoning (recipe below) (.25) GF Pecorino Romano seasoned bread crumbs (.50) 1 tsp. Angie’s dry seasoning (.25) ¼ c. Angie’s basting olive oil ($1.50) 1 large eggplant ($1.20) Lettuce or spinach, tomato, red onion the mixings for 3 burgers ($2.00) Directions Rinse the eggplant, slice it in ½ inch slices, sprinkle salt over allow to sit for about 10 minutes to sweat the bitter flavor, then rinse well, pat dry. Meantime, season the chicken with my new Italian dry seasoning (recipe below), make 3 patties and refrigerate. Next, pour my basting olive oil into a deep plate, the bread crumbs in another and add 1 tsp. of my dry seasoning to the bread crumbs. Dip each eggplant slice into the basting olive oil, then into the bread crumbs both sides and place in a baking tray until time to bake. Preheat the oven at 400 and bake for about 15 keeping an eye on them often, since each oven is different. Then flip them to brown on the other side. While the eggplant bake, prep the lettuce, tomato and onion and then start cooking your chicken burgers. What’s left is your time to assemble each burger and enjoy them. Dried Oregano (of course) 1 tbsp. Dried Basil 1 tbsp. Dried Thyme 1 tbsp. Dried Rosemary 1/2 tsp. Parsley Flakes (.15) 1 tbsp. Dried Sage 1 tbsp. Granulated Garlic ½ tbsp. Ground Cumin Sea Salt and Pepper to taste In a glass jar with a lid mix all the aforementioned spices. Done, Enjoy!
