MY PORK TENDERLOINS CAULIFLOWER FRIED RICE with ROASTED BEETS and CARROTS

Another healthy dish that is also refreshing and simple. The ingredients are fresh and to make it faster, I roasted the veggies earlier at 400 degrees for 40 minutes.

Ingredients for the Cauliflower Fried Rice ($5.00)
4 small pork tenderloin round filets cut up in 1” pieces ($2.50)
2 cups of cauliflower rice (either homemade or purchased at the grocery store) ($1.50)
1 ½ tbsp. Angie’s Basting Oil for the rice & pork (See my link below) (.35)
2 tsp. Angie’s dried seasoning for the cauliflower rice, & pork (See my link below) (.20)
6 garlic cloves, chopped (.30)
1 spring of green onions, chopped for garnish. (.15)
 
Directions for the Cauliflower Fried Rice
Cut the tenderloins in 1” and marinade well with 1 tbsp. basting oil, 1 tsp. of my dried seasoning and chopped garlic. Refrigerate for about 10 minutes.
In a skillet over med-high, sauté the pork tender pieces in its marinate until golden.
Add the cauliflower rice, ½ tsp. of dry seasoning and more basting oil if needed. Stir.
Cover the pan and cook in low for about 2-3 minutes, the steam will soften the cauli rice. Done.
 
Ingredients for the oven roasted veggies ($2.95)
2 fresh raw beets, peeled and cut in cubes ($1.50)
4 rainbow carrots peeled and cut diagonally at about 3”. ($1.00)
2 tbsp. Angie’s Basting Oil (.45)
 
Directions for the Oven Roasted Veggies
Peeled and cut the beets in cubes.
Peeled and cut the rainbow carrots diagonally at about 3”.
Place in a baking dish and rub my basting oil all over.
Cook for 40 minutes.
 
Enjoy.
