We should take advantage of all kinds of fruits available to us. Fresh fruits are the best to eat for breakfast and in smoothies. However, is also ok to take them to another level with good old chocolate. Today I decided to dip my fruits in white and milk chocolate. It took me 20 minutes and boom, time to savor them slowly.
Approximate Prep and Cooking Time: 20 minutes Approximate Cost: $6.50 or $1.63 per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 4 Ingredients 12 fresh strawberries, stems on, rinsed and spin dry ($2.50) 12 fresh pineapple slices ($1.50) 1 c. premium white chocolate morsels ($1.25) 1 c. semi-sweet chocolate morsels ($1.25) Directions Rinsed and spin dry all the strawberries. Peel, core and slice a fresh pineapple, (just need to obtain 12 nice ½” slices). Line a pan with parchment or wax paper. Melt the brown chocolate according to the bag directions, dip all the fruits, you could use a small tong to dip them, I just hold mine by the stem. Allow the fruit to set on the parchment paper. Place the white chocolate into a Ziploc bag, push it to a corner, close the bag and make a tiny small cut to allow the white chocolate to drip over the fruits. Be generous. Allow all the fruits to set, about 15 minutes, depending on your home temperature. Refrigerate for few days if you are lucky enough to have some left, smile.

I always select a pack with less visible fat, in spite of the fact that I remove every bit of it and replace it with olive oil to season and to cook. This time I made a somewhat healthy meal adding the quinoa, ripe plantains and avocados. Approximate Prep and Cooking Time: 30 to 35 minutes, depending on Quinoa cooking time. Approximate Cost: $12.65 or $3.16 per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 4 Ingredients 1 pk. over 1 lb. country style ($4.51) 1 ½ tbsp. Adobo (.20) 2 tbsp. Olive oil (.80) 1 c. Quinoa ($1.00) 2 c. chicken broth ($1.25) 1 pk. Goya ripe plantains ($2.39) 2 Avocado ($2.50) Directions Clean and season the ribs with 1 tbsp. olive oil and 1 tbsp. Adobo, refrigerate for 7 minutes. Meantime, cook the Quinoa according to the packet directions, it takes about 25 minutes; however, use broth instead of water and add ½ tbsp. of Adobo instead of salt. While the quinoa cooks, sauté the country style ribs in their basting oil until golden. Let them rest for about 5 minutes while you slice the avocado and microwave the Goya sweet plantains. Done! Time to Enjoy Your Meal. Not only this meal is super colorful and enticing, it is also healthy. I used white corn tortillas instead of flour tortillas; moreover, I made a 3-ingredient black bean filling with only olive oil, seasonings and olives. Cook the fish for few minutes until golden in a skillet with its own marinade, then carefully, cut into 4 pieces diagonally. Assemble the bowls according to my slide presentation if you like it. The question is: "what is a cupcake and what is a muffin?". Hard to tell since both are cute small things. However, the difference between both is that a muffin is of denser texture, not too sweet, often times have fruits inside and doesn’t get frosting. The cupcake on the other hand is simply a baby mini cake, always sweet and you can eat with or without frosting; however, chances are it will always have a ton of frosting. My cornbread MUFFIN today is intended to be serve as dessert or with a cup of coffee for breakfast. This is not the savory kind though, is rather sweet; however, not over sweet and the ultimate option, if you don’t want to sprinkle powdered sugar, is to drizzle honey over it. BOOM! Nutmeg (.15) 1 tsp. Ginger (.15) 2 eggs (.32) 1/3 cup peanut oil (.65) 1 cup evaporated milk (.65) Powdered sugar to sprinkle over the muffins (.35) Directions Gather all your ingredients and preheat oven at 350 degrees. Butter a 12 muffin pan, set aside. In a large bowl, whisk cornmeal, sugar, flour, baking powder, cinnamon, nutmeg, ginger and salt. In another medium size bowl whisk the eggs, milk, and peanut oil. Now, whisk the wet mixture into the dry mixture just until the whole mix is combined. (The mixture is not intended to be smooth; therefore, do not over whisk.) Pour the batter into your muffin baking mold and bake until a toothpick in the center comes out clean. About 15 to 25 minutes depending on your oven calibration. NOTE: If you have any leftover batter, make individual baby cakes in separate molds. And don’t forget to drizzle honey over them… well, that is if you don't want to spread some butter. Yummy. Ok, so… I was starving and suddenly remember that I marinated some pork tenderloin pieces to make a stir fry with Asian Rice Noodles. Well, change of plans, it was raining and cold outside and I decided I was craving for something soupy. Therefore, I ended up gathering these few ingredients from my pantry and made a soupy white garbanzo bean and pork chili to ease my soul. Ha, ha.
