I can make flan in my dreams, smile. It’s so easy and delicious that is always a winner!

Prep and Cook Time: 1 hour Approximate Cost: $5.96 or .85 cents per serving Difficulty Level: Easy Allergens, Other: Gluten Free Servings: 7+ Ingredients 1 cup of organic sugar for the caramel (.50) 1 (12 oz.) can evaporated milk $1.25) 1 can condensed milk ($1.45) 1 ½ tbsp. Godiva Liqueur (.90) 1 ½ tbsp. Chocolate Almond Cordial (.90) 6 whole eggs at room temperature (.96) Directions Preheat the oven at 350 degrees. Add the sugar to a skillet on med high until the sugar melts and turn into caramel. (Don’t burn it) Carefully, pour the caramel into a mold of your choice, set aside. Place the mold inside a larger mold, pour hot water and place the caramel mold in the middle. (This is called Baño de Maria or/ bain-marie or/ double boiler) Set aside. Add all the ingredients in the order they are listed to a blender and then blend. Add the blender custard mixture into the caramelized mold. Place in the oven and bake for 1 hour. Check for doneness in the middle. An inserted toothpick must come out clean. Remove from the oven and let it cool completely. The flan will jiggle. Refrigerate to serve it cold. To plate it, make sure that the Flan is completely detached from the sides. Place a larger plate over the flan mold and making sure the flan is 100% detached, carefully turn it upside down to remove from the mold. This flan combination is delicious. Why not sprinkle some cinnamon or ginger over it and serve it with a scoop of your favorite ice cream!

THESE ARE CRAZY TIMES! The economy has many people struggling to make ends meet. Taxes, gas, interest rates, well, you get my point. People are struggling to feed their families with the high groceries cost. However, you can still eat healthy. This is a good example, a salmon filet cost me: $20.61. I was able to get 6 meals ($3.44 ea.) for 2 people on each meal., BOOM!
Meal #1: 2 salmon steaks w/beets, asparagus and Brussels; Meal #2: Seared salmon Chunks with pan roasted potatoes; and Meal #3: Asian Stir Fry Style Salmon . Just add veggies and a salad and let’s say each full meal probably will cost under $5.00. I don’t even think a fast food restaurant charges this little for such healthy and affordable meal(s)! FOLLOWING ARE THE MEAL MENU IDEAS BELOW for YOU! Ingredients for MEAL #1: Pan-seared Salmon, mashed sweet potato & Brussels 2 salmon steaks (pat dry, cut in 1 ½ “pieces, season with dry seasonings & basting oil) 2 c. of cleaned Brussels sprouts, cleaned sliced and steamed until tender, and Mashed Sweet Potatoes with Angie’s dry seasoning & Angie’s basting olive oil to-taste, plus a Lettuce, Bacon, Tomato Salad Ingredients for MEAL #2: Sauté Salmon Chunks, Asparagus, Beets 2 salmon steaks (pat dry, cut in 1 ½ “pieces, season with dry seasonings & basting oil) ½ lb. asparagus, steamed in lightly salted water (then sautee in the salmon pan drippings) 2 fresh beets, cut in 1” cubes and baked (or use store bought) Angie’s dry seasoning & Angie’s basting olive oil to-taste Shredded Carrots, celery, onion and sliced Tomato Salad Ingredients for MEAL #3: Oven Roasted Salmon Steaks, Chopped Garlic, Potatoes 2 salmon steaks (pat dry, season with my dry seasonings & basting oil) 5 large garlic cloves, chopped, mixed with basting oil & seasoning to marinate salmon. 2 to 3 med-size red potatoes, season to-taste (oven roasted) Angie’s dry seasoning & Angie’s basting olive oil to-taste to drizzle over the whole meal. Spinach & Kale with EVOO and Balsamic vinegar Green Salad General Directions for the salmon: Pat dry the salmon and season with 2 tbsp. of my basting olive oil and 1 ½ tsp. of my dry seasoning. Refrigerate one meal and freeze the other 2 salmon meals for next week. NOTE: Each of these 3 meals with sides are approximately under $5.00 per 2 people. Therefore, I set my mind to stuff the tenderloin, however, nothing came to mind. Suddenly, I opened my pantry and saw the Julien Sun Dried Tomatoes in Olive Oil jar, and I decided to use it, then added fresh spinach and boom, done!

Prep and Cook Time: Under 45 Minutes Approximate Cost: $7.45 or $3.73 per serving Difficulty Level: Easy Allergens, Other: Gluten Free Servings: 2+ Ingredients 1 pork tenderloin filet, cleaned, pat dry, butterfly and seasoned ($3.00) 1 tsp. dried Chimichurri seasoning (.10) 1 tsp. of roasted garlic and herbs (.10) 1 tsp crushed Rosemary herbs (.10) ½ jar of Trader Joe’s Sun Dried Tomatoes in Olive Oil ($1.50) 2 tbsp. of Angie’s basting olive oil (.40) 7 to 8 Little Potato Trio, rinsed, pat dry ($1.00) 1 avocado ($1.25) Directions Clean, pat dry, butterfly cut the filet, cover with plastic paper and pound it all over to flatten it. Place in a baking safe pan and season the flatten tenderloin with 1 tsp. dried Chimichurri seasoning, 1 tsp. of roasted garlic and herbs, 1 tsp crushed Rosemary herbs and 2 tbsp. of my basting olive oil. Place the sun dried tomatoes on one side of the filet and cover with spinach. Start rolling the filet to obtain a slim roll. Then secure it with either toothpicks or cord. Add the baby potatoes to the pan and smother the pork and potatoes with my basting oil all over. Roast at 400 degrees uncovered for about 30 minutes, depending on your oven and the thickness of the roll. To test for doneness, use a digital thermometer for an internal temperature of 145 degrees F. Prep and Cook Time: Under 5 hours Approximate Cost: $3.30 or .55 cents per piece Difficulty Level: Easy Allergens, Other: Not Gluten Free Servings: 6+ Ingredients 6 c. bread flour ($2.00) 3 c. Water (.0) 2 pk. Rapid Rise Yeast ($1.20) 1 tbsp. salt (.10) Directions Mix all the above mentioned ingredients in a large bowl, use a spoon or an electric mixer until you get a ball, but DO NOT KNEAD it. Cover with plastic wrap. Allow to rise for at least 3 hours or up to 3 days. When the dough doubled in size, preheat your oven to 400 degrees. Then place an empty dutch oven with the lid inside the hot oven to preheat for about 30 minutes. Sprinkle some flour on your counter and gently place the dough over it to shape into a ball. Place the ball onto a piece of parchment paper. Take the hot dutch oven out of the oven, remove the lid and place the parchment paper carrying the dough into the dutch oven and cover it with the lid. Put it back in the oven and bake for about 1 hour at 400 degrees. After 1 hour, to check the color of the crust, remove the lid. Bake for another 20 minutes uncovered to brown the top, keeping an eye on it so it won’t burn. |
