If you want to cook a simple and fast meal at home that is also quite nice, just purchase the main ingredient, like prime filet mignon, mushrooms, corn and avocado, open a bottle of great wine and then enjoy a nice meal with your love one. Yes, good old Arroz con Pollo, a very Latin dish that takes a bit longer to cook than my quick version and it cost almost nothing. This is 2018 and there is no time for anything anymore. It’s all about the internet, social media, kid’s sports practices, games, tournaments and hurry, hurry, hurry; smile. Approximate Prep and Cooking Time: under 30 minutes Approximate Cost: $6.35 or $2.12 per serving Difficulty Level: X Easy ____ Intermediate ____ Advanced Servings: 3 Ingredients 3 chicken drums ($1.80) 1 ½ tbsp. olive oil (.50) 1 tsp. chimichurri flakes (.30) 1 Sazon envelope (.25) 1 chicken bouillon (.25) 1 ½ c. Basmati Rice Medley ($1.75) 2 c. water (0) 1 chopped scallion spring (.15) 1 avocado ($1.20) ¼ of Roasted red peppers (Pimentos) (.15) Directions Prepare the drums by removing the skin and any unnecessary fat. Pat dry and season with chimichurri flakes, Sazón and 1 tbsp. of olive oil. In a med-size pot add the drums with the oil marinade and cook them just until golden brown. Remove and set aside. On the same pot, add the rice and stir to toast a bit, then add carefully 2 cups of water, the chicken bouillon and ½ tbsp. oil, stir well until all ingredients are combined. Add the chicken drums, arranged on top of the rice without stirring and bring it to a boil. Reduce the heat to low, cover the pot and cook for 20 minutes. To serve, slice the avocados, slice the red pimento peppers and garnish with scallions. Sometimes we just need step out of the “traditional” salads for lunch, don’t you think? Smoked salmon is not so far-fetched and furthermore, we simply owe it to ourselves. My nutritious and uniquely different lunch salad just takes 10 minutes to make and the good news is that it uses very fee ingredients. My salad vinaigrette is not bad either, I also give you the link below, so what are you waiting for, make it for lunch tomorrow, smile. Since I was born and raised in an island, I learned early on in my life to eat all kinds of seafood coming fresh from the ocean. Shrimps are really tasty but fish is delicious, nutritious and super healthy. Adobo (.15) 1 tsp. olive oil to season the seafood (.30) ¼ cup olive oil for the Escabeche sauce ($1.25) 1 onion sliced (.40) 7 garlic cloves, minced (.30) 1 tbsp. red wine vinegar (.15) ½ tsp. Cumin (.15) 1 tbsp. Pepper corns (.15) 3 Bay leaves (.15) 1 small jar of drained roasted red peppers ($1.55) 2 tbsp. Goya olives (.40) Ingredients for the Yellow Rice ($3.05) 2 cups or parboiled rice ($2.00) 4 cups of water (0) 1 tbsp. of Adobo (.25) 1 tbsp. olive oil (.30) 2 Sazón envelopes (.50) Directions Season the fish and shrimp with 1 tbsp. Adobo, and 1 tsp. olive oil. Slice the onion and garlic, set aside. To cook the yellow rice, boil 4 cups of water, 1 tbsp. of Adobo, 1 tbsp. olive oil and 2 Sazón envelopes. When the water is boiling, add the 2 cups or parboiled rice. Bring to another boil, reduce the heat to low and cover. Cook for 20 minutes. While the rice cooks, prepare the adobo sauce by adding to a pan in medium heat ¼ cup olive oil. When hot, add the sliced onion and garlic and cook until translucent. Then add Vinegar, Cumin, Pepper corns, Bay leaves, roasted red peppers and Goya olives. Bring the heat to low and cook for about 10 minutes. Sauté the fish until golden and shrimp until pink. Then add to the Escabeche sauce and let it rest there for about 30 minutes to absorb the flavors. Serve and enjoy. My healthy burger is intended to please any burger lover and yet so delicious. The idea is avoid going on a “diet” but instead to eat healthier and to control the portions that we eat. Of course, you also need to move your body, at least do some walking. Let’s not deprive ourselves of good “normal” food, just use healthier ingredient.
